RECIPE OF THE WEEK  PASTA PRIMAVERA

Pasta Primavera 


Ingredients (Serves 4)
12 oz pasta (spaghetti, fettuccine, or penne)

2 tbsp olive oil

3 cloves garlic, minced

1 small zucchini, sliced

1 small yellow squash, sliced

1 cup cherry tomatoes, halved

1 cup asparagus, cut into 1-inch pieces

½ cup peas (fresh or frozen)

½ tsp red pepper flakes (optional)

½ cup grated Parmesan cheese (or a dairy-free alternative)

Zest and juice of 1 lemon

¼ cup fresh basil, chopped

Salt & pepper to taste

Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.

Sauté the vegetables: While the pasta cooks, heat olive oil in a large pan over medium heat. Add garlic and red pepper flakes, cooking until fragrant (about 30 seconds).

Add the veggies: Toss in zucchini, yellow squash, and asparagus. Sauté for 3-4 minutes, then add cherry tomatoes and peas. Cook until the veggies are tender but still vibrant.

Combine everything: Add the drained pasta to the pan along with the reserved pasta water. Stir in Parmesan cheese, lemon zest, and juice. Toss well to coat.

Season & serve: Add salt and pepper to taste, sprinkle with fresh basil, and serve warm with extra Parmesan on top.
